about Kate

Katelyn Williams is an ice cream maker, waffle cone mix distributor, and recipe creator living in Portland, OR.

Originally from Lafayette, Louisiana, Kate moved to Cambridge, MA with her husband in 2013. She launched her first ice cream business, Scoop Sights in 2014, making dairy-free ice cream popsicles and selling them out of a tricycle at local farmers markets in the Boston area.

In 2017, Kate and her family moved to Portland, OR. She realized there was still an opportunity to bring this ice cream to her new city. Wanting to continue her entrepreneurial ice cream journey, she founded Kate’s Ice Cream in 2019. Kate’s focuses on elevating the childhood classics, collaborating with local, woman, and minority owned businesses, and using the bountiful farms of the Pacific Northwest to make seasonal ice creams.

Kate also founded Kate’s Waffle Cones in 2019, providing her own recipe of gluten-free waffle cone mix to ice cream shops around the country. After hearing a 7 year old boy tell her he had never had a waffle cone in his life, she set out on a mission to create inclusive experiences through plant-based and gluten-free foods. Her goal is that everyone is able to have the classic ice cream shop experience that many grew up with.
